Zartar Chicken with Hummus

Ingredients - Portion - 8-10

  • Chicken Thigs – 1Kg
  • Garlic – 30 Gms
  • Zartar Seasoning – 60 Gms
  • Onion – 100 Gms
  • Salt – to taste
  • Lemon Juice – 60 Ml
  • Boiled Chickpeas – 400 Gms
  • Tahini Sauce – 100 Gms
  • Parsley – 10 Gms
  • Olive Oil (Extra Virgin) – 100 Ml
  • Pita Bread – 4 Pcs

Method of Preparation

  • Cut the chicken in cubes, rinse and pat dry the chicken
  • Marinade the chicken with salt, chopped garlic (20 Gms), Zartar Seasoning, and lemon juice (30 ML), finish with olive oil. Keep aside for minimum 6 hours, or overnight
  • Cut onion into 1-inch dices and skewer the marinated chicken and onion dices alternatively, set aside
  • Drain the chickpeas, reserve 50 gms aside, and put the rest in the food processor along with tahini, lemon juice (30 ML), and blend to a find puree
  • Check seasoning and set aside.
  • Take a non-stick flat bottom pan and put over medium heat pour in 2 table spoons of oil and heat through
  • Add the skewers, and grill the chicken on each side for 7-8 minutes or until nicely charred
  • To serve, pour the chickpea puree into a bowl, garnish liberally with chopped parsley, olive oil and a few whole chickpeas, arrange the skewers on a platter alongside with pita breads
