Spaghetti with Vegetables in tomato Basil Sauce

Ingredients - Serves : 4

  • 3/4 cup boiled and diced mixed vegetables(Mushrooms, Corn, green Peas)
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped capsicum
  • 3/4 cup boiled sweet corn kernels
  • 2 1/2 cups cooked spaghetti
  • 1 tbsp olive oil
  • salt to taste
  • Black Pepper to taste
  • Chopped Basil ½ tsp.
  • Mix Olives
  • Sundried Tomato
  • 4 Tbl Spn Ragu tomato sauce
  • 1 tbsp sugar
  • salt to taste
  • 1 cup white sauce
  • 1/4 cup grated processed cheese

Method - For the Vegetables and Spaghetti Mixture

  • Heat the olive oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
  • Add the capsicum and sauté on a medium flame for another 1 minute
  • Add the mixed vegetables, sweet corn, spaghetti, chilli powder and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

How to Proceed

  • Combine the vegetable and tomato sauce in a broad non-stick pan, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally
  • Add the Blanched spaghetti & stir well. Add chopped Basil & season well
  • Pour this mixture into a baking dish and pour the white sauce evenly over it.
  • Finally sprinkle the grated parmesan cheese evenly over it and bake in a pre-heated oven at 200°c (400°f) for 10 minutes
  • Garnish with Sundried tomato Julienne’s, Olives & basil sprig
  • Serve immediately.
