Hara Bhara Kebab - a delicacy of the Nawabs

Ingredients - (Portion - 8-10)

  • Spinach – 2.5 kg
  • Chana dal - 500 gms
  • Red chilli powder - 75 gms
  • Corn flour - 75 gms
  • White Pepper - 25 gms
  • Salt- to taste
  • Fenugreek powder - 15gm
  • Chaat Masala - 15gm
  • Mace-cardamom(pwd.) - 30gm
  • Pure ghee - 250 gm
  • Brown Khoya - 100gms
  • Cashew nuts (browned crushed) - 100gms
  • Processed cheese – 200gms

Method of Preparation

  • Boil the spinach, squeeze out water and make a puree. Boil chana dal separately, drain out excess water and make a paste.
  • Heat a frying pan and put ghee. Add paste of spinach and dal and Bhunao for a while. Add the corn flour for binding and cook for 5 min. Allow it to cool. Add all the powdered spices.
  • Make stuffing with brown khoya , nuts and processed cheese
  • Make small tikkies stuffed with brown khoya cashewnuts and grated processed cheese.
  • Shallow fry from both sides with very little ghee on tawa. Serve sprinkled with fenugreek & Chaat masala
